St. Lucia Saffron Buns

It is traditional to serve Lussekatter or St. Lucia Buns on the Feast of St. Lucy - December 13!

These buns look like a pair of eyes because St. Lucy is the patron saint of the blind (one of the many legends around St. Lucy is that when Roman soldiers plucked out her eyes, she popped them back in with no apparent detriment to her sight! This is why some icons of St. Lucy feature her holding a pair of eyeballs.)

If you’d like to try your hand at making some Lussekatter - this recipe is delicious and not overly complex!
